Fast, easy dinner

Hi everyone:

I just had to blog about the dinner I made tonight.  It is very easy and tasted fantastic and requires only 6 ingredients.  It is a simpler version of the best-selling dish we used to make at the restaurant I worked at, many years ago.

The original version was called " Seafood au gratin" and we couldn't keep up with the demand for this dish.  Here is a simpler, but just as tasty, version for those of you who need something good, but FAST. This will feed about 4 people, with some leftovers.

Simple Seafood au Gratin

2-3 cups cooked rice (I used leftovers)
1- 1 1/2 lbs. of cooked shrimp
1 can  Campbell's Cream of Mushroom soup - ready to serve - 540 ml
Pinch of garlic powder
Pinch of onion powder
Grated cheese (I used leftover shaved Parmesan and a blend of  Monterey Jack and cheddar)

Layer the cooked rice in a casserole dish.  Sprinkle the cooked shrimp onto the rice. Sprinkle the onion and garlic powders onto the shrimp.  Add the entire can of soup onto the shrimp.  Sprinkle the grated cheeses on top.  Bake at 350* for approximately 45 minutes - 1 hour. Voila!

The original restaurant version was more involved. We used sole, shrimp and scallops (any white fish will do) and made our own white sauce with fresh mushrooms, topping it with Swiss and gruyere cheeses, but this is a fast way to prepare the same type of meal.  Add a green salad and you are done.

My family loves seafood au gratin and this couldn't be easier. I hope you try this and enjoy!  Let me know how you like it.
